I thought I would add my Grandmother's rice pudding recipe here. I call it Nanny's Rice Pudding. My Grandmother (or Nanny as we called her) never put her recipes in writing. Luckily my Mom jotted this recipe down before my Nan died a couple of years ago. Based upon how you interpret the directions and how long you cook it, you'll get different results. So, here goes. I hope you like it. The ingredients are:
- 1 cup of rice
- 2 cans evaporated milk (whole is better than skim)
- 4 large eggs
- 1/2 cup sugar
- 1 teaspoon vanilla
- raisins
- cinnamon
Put the rice in a 2 quart pan. Cover with water (about 3 cups). Let cook slowly until all the water is absorbed. Then add the evaporated milk and stir. Beat the eggs in a bowl and then add to the mixture. Stir. Add the sugar and vanilla. Stir. Let cook slowly until it become creamy and somewhat thick. It should not be watery. Then add raisins to taste (about 1 cup if you like a lot of raisins). Stir a little and remove from the heat. Let cool a little in the pot. Then pour into a large bowl and let cool. Do not put it into the refrigerator until it is cool. Sprinkle with cinnamon. Then put in the refrigerator to chill.
